
We love flank steak for it's flavor and because it's great for feeding a crowd.
Here's our secrets:
1. Let the steak come to room temp. A cold steal doesn't cook evenly.
2. Season it well! We like to do a wet rub for flavor (cumin, smoked paprika, grated garlic, salt, pepper and olive oil).
3. Grill on both sides over high heat and then place in a 400 degree oven for 8 minutes. This seals in juices and prevents it from over-cooking.
4. Let rest for 10 minutes so the juices can settle.
5. Slice thinly against the grain.
This is an important part -- slicing against creates a more tender piece of meat. Enjoy!!
